Quadrotto (goat stracchino)

Similar to taleggio, but produced with raw goat milk; it is part of the Lombardy, Piedmont and Veneto tradition since the Middle Ages.
The cheese is uniform and compact, softer under the crust, more crumbly in its center, the color varies from white to straw, with a few small holes.

To enhance its full flavor and aroma, we recommend to serve it at room temperature or lukewarm and taste it with homemade bread and jam with berries, accompanied by an aromatic white wine or sparkling.
Amazingly the combination with chestnut honey and crunchy radishes.

Buono gustato semplicemente con pane caldo e, se piace con del miele, è eccezionale per mantecare i risotti a fine cottura:)
